In honor of the final installment of the guardians of the galaxy trilogy (which hits theaters on May 5, FYI), HelloFresh has a pack of snacks and a series of recipes so delicious they could send you into space. Guardians Snack Adventure

The Guardians Snack Adventure Kit contains pre-portioned ingredients and step-by-step recipe cards so you can make two servings of Zarg’s Nut Bites (comprised of crushed pretzels, salted cashews, sweet Thai chili sauce and chocolate chips) and mango. Milky Fizz (containing apricot jam, coconut milk, seltzer water and mango pieces). Not to mention the fact that they come in seriously cosmic milk cartons.

These kits are available on a first-come, first-served basis (no HelloFresh subscription required) at www.HelloFreshAdventure.com, starting Monday, April 17 at 12 p.m. EST. If you miss your chance, keep your eyes peeled for additional kits to be available on Monday, April 24 and Monday, May 1 at 12 PM EST.

Ingredients

  • Jalapeño
  • 3 radishes
  • 2 tablespoons cream of smoked red pepper (contains milk)
  • 2 tablespoons
  • Mayonnaise (contains eggs)
  • 1 teaspoon chipotle powder
  • 4 ounces shredded red cabbage
  • 82g tempura batter (Contains milk, egg and wheat)
  • 2 tablespoons blackening spice
  • 11 ounces of tilapia (Contains fish)
  • 6 flour tortillas (Contains Wheat, Soy)

Instructions

  1. Wash and dry the products. Zest and a quarter of a lime (for 4 servings, zest a lime and a quarter of both). Thinly slice the jalapeño into rounds, removing the ribs and seeds for less heat. Thinly slice the radishes. In a small bowl, combine the smoked red pepper cream, mayonnaise, a pinch of lime zest to taste and chipotle powder to taste. Add water 1 TSP at a time until the mixture reaches a drizzling consistency. Season with salt and pepper.
  2. In a second small microwave-safe bowl, combine the jalapeño, radishes, juice of half the lime, 1 tsp sugar (2 tsp for 4 servings) and a pinch of salt. Microwave for 30 seconds. Set aside, stirring occasionally, until ready to serve. In a medium bowl, combine the cabbage, juice from the remaining lime, 1 tsp sugar (2 tsp for 4), salt, pepper, and remaining lime zest to taste.
  3. In a large bowl, whisk together the tempura batter mixture, ½ the Charring Spice, ⅓ cup cold water (⅔ cup for 4 servings) and ½ tsp salt (1 tsp for 4) until smooth. TIP: If the mixture is too thick, add more water 1 tablespoon at a time until it reaches a consistency similar to pancake batter. Pat the tilapia dry with paper towel, then cut it into strips (ours were 3 inches long and 1 inch wide). Season with remaining Blackening Spice, salt and pepper. Fold the strips into the batter until evenly coated. Line a plate with paper towel.
  4. Heat a ¼-inch layer of oil in a large skillet, preferably heavy-bottomed, over medium-high heat. Once the oil is hot enough that a drop of batter will sizzle when added to the pan, add the coated fish in a single layer, working in batches. (Shake off excess batter before adding.) Cook until golden brown and cooked through, 1 to 2 minutes per side. TIP: To check for doneness, cut a strip in half. Using tongs or a slotted spoon, transfer to a plate lined with paper towel. Salt and pepper immediately.
  5. Meanwhile, wrap the tortillas in damp paper towel. Microwave until warm and soft, 30 seconds.
  6. Divide the tortillas between your plates; top with coleslaw (drained first) and fried tilapia. Top with chipotle mayonnaise and pickled jalapeño and radishes (drained first) to taste, and serve.The tilapia is fully cooked when the internal temperature reaches 145°.
